Fancy: The lightest in color with a mild delicate maple flavor

Medium Amber: A little darker and a little more maple flavor

Dark Medium Amber: From sap later in the season with a bolder maple flavor

Grade B: The last runs of sap in the spring, dark with a very strong maple flavor, most often used for cooking
